At Hoover, the Bucs went 14-1 (State Champions) in 2000, 14-1 (State Runner-up) in 2001, 13-1 (State Champions) in 2002, 14-1 (State Champions) in 2003 and 15-0 (State Champions) in 2004. 2005 was Coach Watson's first season at Foley. The Lions finished 8-2, were Region 2 runner-ups, and were ranked #10 in the final 6A state poll. Coach Watson was selected as the 6A State Coach of the Year by the ASWA, Mobile Register's Coach of the Year and the Baldwin County Coach of the Year. In 2006 the Lions followed that up with a 10-2 season and a #5 ranking in the final 6A poll.

In 2007, the Lions had their 6th undefeated regular season in school history. They finished 12-1 and were the 6A Region 2 Champions. Coach Watson was selected as the AFLCA 6A Coach of the Year and the Baldwin County Coach of the Year.

Coach Watson and his wife Christie have been married for 16 years. They have 2 daughters: Leigh Ashton and Micah.
